- 225 g 8 oz self-raising flour
- 110 g 4 oz butter, softened
- 75 g 2.5 oz caster sugar
- 110 g 4 oz mixed dried fruits (raisins, currants, candied peel)
- 1 large egg
- 1 teaspoon vanilla extract
Preheat oven to 180C/350F/Gas 4. Grease two baking trays or line them with baking paper.
In a large bowl, combine the flour and baking powder.
Add the butter and rub in with your fingertips until the mixture resembles fine breadcrumbs.
Stir in the dried fruit and sugar.
Beat the egg and milk together and add to the fruity mixture. Mix until just combined.
Drop spoonfuls of the mixture onto the prepared baking trays, spacing them well apart.
Sprinkle with demerara sugar.
Bake for 15-20 minutes, or until golden brown.
Serve warm or cold.
