Ingredients
  

  • Chicken breast or thighs
  • Large shrimp
  • Key lime juice
  • Garlic
  • Olive oil
  • Paprika
  • Cilantro
  • Salt and pepper
  • Rice
  • Vegetables
  • Sliced avocado
  • Salsa

Instructions
 

  • In a large bowl, whisk together the orange juice, vinegar, lime juice, avocado oil, honey, soy sauce, granulated garlic, salt, and pepper.
  • Add the chicken and shrimp to the marinade and toss to coat.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to overnight.
  • Preheat the grill to medium-high heat.
  • Remove the chicken and shrimp from the marinade and discard the marinade.
  • Grill the chicken for 6-8 minutes per side, or until cooked through.
  • Grill the shrimp for 2-3 minutes per side, or until pink and cooked through.
  • While the chicken and shrimp are grilling, prepare the pineapple pico de gallo.
  • In a medium bowl, combine the pineapple, red onion, cilantro, lime juice, olive oil, salt, and pepper. Stir to combine.
  • To serve, divide the chicken and shrimp among plates and top with the pineapple pico de gallo.
