Ingredients
  

  • For the Poached Chicken:
  • 4 boneless skinless chicken breasts
  • 2 bay leaves
  • 6-8 black peppercorns
  • Salt to taste
  • For the Coronation Sauce:
  • 1/2 cup mayonnaise
  • 1/2 cup Greek yogurt
  • 1 tablespoon mango chutney
  • 1-2 teaspoons mild curry powder adjust to taste
  • Juice of 1 lemon
  • Salt and freshly ground black pepper to season
  • Additional Ingredients:
  • 1/3 cup dried apricots finely chopped
  • 1/4 cup sliced almonds plus extra for garnish
  • 2 tablespoons fresh cilantro coriander, chopped
  • Crusty bread or cooked rice for serving

Instructions
 

  • In a large bowl, combine the chicken, apricot jam, curry powder, mayonnaise, cream, tomato purée, lemon zest and juice, spring onions, and grapes. Season with salt and pepper to taste.
  • Stir until well combined.
  • Serve cold, garnished with rocket or parsley.
