- For the Poached Chicken:
- 4 boneless skinless chicken breasts
- 2 bay leaves
- 6-8 black peppercorns
- Salt to taste
- For the Coronation Sauce:
- 1/2 cup mayonnaise
- 1/2 cup Greek yogurt
- 1 tablespoon mango chutney
- 1-2 teaspoons mild curry powder adjust to taste
- Juice of 1 lemon
- Salt and freshly ground black pepper to season
- Additional Ingredients:
- 1/3 cup dried apricots finely chopped
- 1/4 cup sliced almonds plus extra for garnish
- 2 tablespoons fresh cilantro coriander, chopped
- Crusty bread or cooked rice for serving
