Ingredients

  • Self-raising flour
  • Baking powder
  • Butter
  • Grated mature cheddar cheese
  • Salt
  • Black pepper
  • Milk
  • Optional: Mustard powder or cayenne pepper for extra flavor

Instructions
 

  • Preheat the oven to 220°C/200°C fan/Gas 7 and line a baking sheet with baking paper.
  • Sift the flour, baking powder, salt, mustard powder, and cayenne pepper into a large bowl.
  • Rub in the butter until the mixture resembles fine breadcrumbs.
  • Stir in the cheese.
  • Beat the egg in a jug and add enough milk to make up to 300ml (10fl oz) of liquid.
  • Gradually add the liquid to the dry mixture, stirring until a soft dough forms.
  • Tip the dough onto a lightly floured surface and knead lightly until smooth.
  • Divide the dough into 8 equal pieces.
  • Shape each piece into a round and place on the prepared baking sheet.
  • Bake in the preheated oven for 10-12 minutes, or until golden brown.
  • Serve warm or cold, with your favorite spread.
