Ingredients
  

  • 2 cups fresh or frozen blue raspberries you can also use regular raspberries if blue raspberries aren't available
  • 1 cup granulated sugar adjust to taste depending on the sweetness of your berries
  • 1 cup water
  • 1/4 cup fresh lemon juice from about 2-3 lemons
  • Zest from 1 lemon for added citrus aroma
  • 1/2 teaspoon pure vanilla extract optional, but adds depth of flavor
  • A pinch of salt enhances the flavors

Instructions
 

  • In a large bowl, combine the sugar, raspberry extract, and hot water. Stir until the sugar is dissolved.
  • Add the blue food coloring and stir until the mixture is well combined.
  • Pour the mixture into a shallow dish or freezer container.
  • Freeze for at least 4 hours, or until the mixture is solid.
